School: Mini vegetables and edible flowers in the spotlight

On Tuesday 10 March 2020, customers at the Pixel application restaurant at the CY Cergy Paris Université Gastronomy Centre were out in force, despite the epidemic, to sample dishes from the "spring" menu prepared a few days ahead of schedule by students and apprentices on the vocational degree course in Culinary and Table Arts. Edible plants and flowers were in the spotlight at this dinner, thanks to a partnership between the Pôle de Gastronomique and Maison Sales, which specialises in the production of mini-vegetables in Perpignan.
The students and apprentices have brought out the best in mini vegetables and edible flowers, combining them with scallops, sea bass and pigeon.
